Ingredients
Steps
-
First knead the water and oil dough ingredients into a smooth dough, cover with plastic wrap and let rest for 30 minutes.
-
Then knead the pastry until it is smooth and grain-free, and divide it into three equal parts for later use.
-
Add 3 grams of matcha powder to one portion and knead evenly into a small ball of 10 grams. Add purple sweet potato powder to the other portion and mix as in the previous step. Divide the third portion directly into a small ball of 40 grams without adding any addition, a total of 30 pieces
-
Then divide the woke water-oil skin into 15g small balls
-
Wrap the pastry in water and oil skins respectively, and seal tightly.
-
Then flatten it and roll it into a long shape with a rolling pin.
-
Wrap it into a small roll from top to bottom
-
After finishing everything, wake up for 20 minutes
-
At this time, you can make the filling. Take half of the bean paste and 15 grams of egg yolk and wrap it into a ball with bean paste
-
After waking up, continue to roll the roll upright into a strip, then roll it up again, following the same steps as in step 7 above.
-
Roll everything up and let it rest for 20 minutes.
-
To make matcha puff pastry and purple sweet potato puff pastry, you need to cut the roll in the middle, overlap and flatten the two rolls with the middle cut side facing out, and roll into a round roll into the bean paste filling.
-
The egg yolk cake is directly folded and flattened, and filled with bean paste filling.
-
All covered.
-
Preheat the oven to 180 degrees. Bake for 25 minutes. Cover with tin foil after 15 minutes. My oven is relatively small and it depends on the temperament of your oven.
-
When baking the matcha puff pastry, I brushed the egg yolk puff pastry with egg yolk liquid and sprinkled it with black sesame seeds.
-
Out of the oven
