Double fruit pie

Since late autumn every year, my delicate stomach has rarely touched all kinds of cold fruits. One night when I was cleaning the kitchen, I saw in the corner of the kitchen that a box of fruit sent by a friend had lost its freshness and water content. I actually felt guilty for betraying my friend's intention to go to the orchard to pick fruits for me. So, I decided to make a fruit pie. The moment it comes out of the oven, the sweetness of the fruit fills the room. For a moment, my stomach felt warm and my heart felt warm.

Have all ingredients ready.

First make the pie crust. Sift 130 grams of low-gluten flour and set aside.

Soften 40 grams of butter in water.

Add the softened butter to the low-gluten flour and 10 grams of caster sugar.

Knead the butter and flour with your hands until it forms a thick dough.

Add appropriate amount of water to the evenly kneaded flour.

Knead into dough. Do not knead for too long, just a slightly smooth dough.

After that, wrap the dough with plastic wrap and let it rest in the refrigerator for more than 15 minutes (it is better if it rests for more than 1 hour).

Core the apple and cut into small cubes.

After the pot is hot, add 10 grams of butter and melt it over low heat.

Add the diced fruit and stir-fry.

Then add 15 grams of fine sugar and continue to stir-fry.

After adding fine sugar, the diced fruits will gradually release water. With this water, slowly cook the diced apples over low heat until the diced apples become soft.

Mix cornstarch with water and pour into the pot.

Stir until the filling thickens.

Turn off the heat, add lemon juice and salt, stir well, and the filling is ready. Cool and set aside.

Take the relaxed pie crust out of the refrigerator and roll it into thin slices with a rolling pin.

Spread the rolled out pie crust on the pie plate and press the pie crust lightly with your hands to make the pie crust stick to the pie plate.

Use a rolling pin to roll over the pie plate and remove any excess pie crust with your hands.

Use a fork to make small holes evenly on the bottom of the pie crust.

Fill pie dish with apple filling.

Wash the pears, remove the core and cut into thin slices as shown in the picture.

Spread an even layer of pear slices on top of the apple pie filling.

Brush an even layer of honey on the pear slices.

Preheat the oven to 200 degrees for 5 minutes, place the kaupai plate in the middle rack of the oven, bake for 35 minutes, then take it out.

Take it out to cool and then unmold.
