Prepare the ingredients (2 loofahs)

Wash the shrimps, pick out the shrimp threads from the third and fourth sections of the shrimps, peel the heads and tails (I peeled them in advance), then add 1 teaspoon of cooking wine, half a teaspoon of salt, onion, ginger, and half a teaspoon of water starch to the shrimps, mix evenly, and marinate for about 10 minutes

Peel and wash the loofah, cut it with a hob, mince the garlic, shred the red pepper and set aside

Pour oil into the pot and heat it, then pour in the marinated shrimps. When the shrimps turn color, immediately remove them from the pot and set aside (the shrimps will age easily over time)

Leave some oil in the pot, sauté the garlic until fragrant, then add the red pepper and stir-fry for a few times

Then add the loofah and stir-fry for about 2 minutes. Add about 2 teaspoons of water (not too much water, the loofah itself also has moisture) and stir-fry a little

Finally add the shrimp, then add half a teaspoon of salt, chicken essence and stir-fry evenly
