Pick the red amaranth leaves and clean them. Drain off the water.

Appropriate amounts of flour and cornmeal, or you can use one type of flour alone.

Add flour and cornmeal.

Mix evenly so that the leaves are evenly coated with dry powder.

Place in a basket, boil the water and steam over medium-high heat for 6-8 minutes (adjust as appropriate depending on the amount of amaranth).

After steaming, take out the steamer and use chopsticks to shake the vegetable leaves loose. Do not simmer them in the pot to prevent discoloration.

Mix garlic paste, sesame oil, mature vinegar, and cold soy sauce until thoroughly combined.

Place the amaranth in a basin, pour in the sauce and mix well.
