【New Year's Eve Dinner】A Must-Have Brine Pair
Overview
In the past, during the Chinese New Year in Chaoshan, a whole braised goose was prepared as a year-end dish to worship the ancestors and to comfort the ancestors for the family's hard work and prosperity this year. However, as life improves, there are more and more choices for New Year’s Eve dinner, and this custom has begun to evolve. However, when entertaining guests during the New Year and festivals, Chaoshan people still like to have a stewed stewed platter. The most common ones include braised goose and braised pig. You can freely choose and eat them according to personal preferences. For this year’s New Year’s Eve dinner, I chose pork tongue and dried tofu, and made a double combination of brine. Pig's tongue means "pig's tongue" in Cantonese, which means "pig's tongue" means getting rich and prosperous. The square shape of dried tofu is like the official seal, and the Chaoyu word "gan" has the same pronunciation as "guan". In ancient times, everything was considered low-grade, except for the diligent Chaoshan people who were well-educated and hard-working. Eating dried tofu symbolizes the good wishes of hard-working, progressive, smart, and poor students who can leap over the dragon's gate. The braised pork tongue with a beautiful meaning tastes tender, delicious and salty, while the dried tofu is equally tender and refreshing.

Wash the pig tongue and put it in cold water.

Boil until cooked; remove.

Use a knife to scrape the tongue coating (white part) clean.

Prepare old tangerine peel, star anise and dried chili peppers and wash them.

Put the pork tongue, old tangerine peel, star anise, and dried chili pepper into the casserole.

Add 1 small bowl of light soy sauce.

Add enough boiling water to basically cover the pork tongue.

Bring to a boil over high heat.

Turn to low heat and simmer for 40 minutes, remove the tangerine peel and add salt.

Rinse the dried tofu with clean water.

Put the dried tofu into the brine pot, turn to medium heat and bring to a boil, then simmer over low heat for 10 minutes, then turn off the heat.

Let the pork tongue and dried tofu soak in the brine until the brine cools down, then remove.
