A cup of rice, soaked dried mushrooms in advance, washed chicken wings and cut into pieces;

Soak rice for 1 hour;

Cut the soaked mushrooms into thin strips and reserve the mushroom water for later use;

Add scallions to the chicken wings, add cooking wine, light soy sauce, dark soy sauce, and black pepper and marinate for 30 minutes;

Pour sesame oil into the pot, add ginger slices and sauté slowly over low heat until the edges of the ginger slices are slightly browned, add the chicken pieces and stir-fry until they change color;

Add mushrooms and stir-fry until fragrant;

Pour in the rice and stir-fry evenly;

Add appropriate amount of light soy sauce, dark soy sauce, and salt and stir well, pour in the mushroom water (add some hot water because it is not enough) and bring to a boil over high heat;

Pour into a casserole and cook over low heat for 20 minutes.
