Taiwanese Braised Pork Rice--a home-cooked meal

Overview

I learned this trick from James’s video, but I can’t follow his instructions 100%, so I have to make changes according to my own situation. To make braised pork rice, pork belly with skin is the best, but you can’t buy pork belly with skin. Unfortunately, without Zhang Butcher, do you have to eat pigs with hair on? To be flexible, I cut the shredded meat a little thicker to prevent it from falling into pieces when cooked.

  1. Cut the pork belly into shreds and put it into the pot over slow heat to stir out the oil.

  2. Chop shallots and garlic, and dice chives.

  3. Stir-fry the shredded pork over medium heat until it gets a burnt aroma. If there is too much oil, you can spoon it out.

  4. Put the meat aside and put chopped shallots on the empty side because it is not easy to stir-fry and stir-fry until fragrant.

  5. Pour in fresh minced scallions, dried scallions, and 1/2 star anise, and sauté until fragrant.

  6. Add minced garlic again, because minced garlic is easy to burn, so add it last and continue to sauté until fragrant.

Add 1 tablespoon of rock sugar and 1/2 tablespoon of brown sugar powder, stir-fry until fragrant, then pour in about 3 tablespoons of light soy sauce, 1/4 teaspoon of refined salt, and 1 tablespoon of dark soy sauce from the side of the pot. Stir evenly. If you are worried that the saltiness is not enough or too light, you can adjust the saltiness with the amount of light soy sauce.

  8. Add water to cover the meat noodles, add 1/2 tsp pepper, and stir evenly.

  9. Put all the ingredients into the electric pressure cooker and set the pressure cooker for 10 minutes.

  10. After the meat is stewed, put it in a ceramic pot, add boiled eggs in boiled water, and simmer over low heat.

  11. When stewing the meat, you can use your hands to fry the tofu until golden brown. This will make the tofu stew more delicious and less likely to rot.

  12. Simmer the fried tofu in a casserole with the meat and eggs for about 30 minutes. When the time is up, turn off the heat and let it sit for at least 20 minutes until the flavor is absorbed. Once everything is done, you can put it on the rice and eat it with the rice. It is so delicious. Enjoy!
