Prepare ingredients.

All the ingredients are cut in order.

Add starch, oil and shredded ginger to the duck mixture and mix well.

Heat oil in a pan, add duck fat and simmer over low heat until oil comes out.

Quickly stir-fry the duck offal until it changes colour.

Once it changes color, take it out in a bowl and set aside.

Leave oil in the pot, add garlic sprouts and chilies and stir-fry quickly until cooked.

Pour in the fried duck giblets.

Add salt, chicken essence, oyster sauce and rice wine to taste, stir-fry evenly and remove from the pan.
