Baked Chicken Wings with Salted Egg Yolk

The front and back sides of the chicken wings are slit for easy flavoring.

Soak the chicken wings in water for 10 minutes to soak out the blood inside.

Drain the chicken wings, add Orleans marinade, a spoonful of cooking wine, mix well and marinate for 20 minutes.

Prepare corn starch, bread crumbs, and egg liquid.

Coat the marinated chicken wings evenly with a layer of cornstarch.

Then evenly coat with a layer of egg wash.

Finally, coat with a layer of bread crumbs.

Heat the oil in a pan, heat the oil to 50% and fry the chicken wings.

Fry slowly over low heat until the chicken wings are set and then turn over. 7-8 minutes is enough for the chicken wings to be cooked easily.

Remove the fried chicken wings to control the oil.

Leave a spoonful of oil in the pot, add salted egg yolk, crush it with a spatula and stir-fry over low heat.

Add a little high-strength white wine to remove the fishy smell, stir-fry the salted egg yolk until the oil becomes foamy.
