Homemade Hong Kong style milk tea
Overview
Last year when I was working part-time in a coffee shop, Susan taught me how to make Hong Kong-style milk tea. It was my first time to come into contact with Hong Kong-style milk tea. I mixed the brewed black tea with black and white evaporated milk, that taste! It’s completely different from the milk tea outside that contains saccharin and creamer! That’s when I realized that this is the taste of real milk tea! ! Peter also taught me that if I want to have a stricter taste, I should use three different specifications of Ceylon black tea powder for seasoning, namely coarse Ceylon black tea powder, medium Ceylon black tea powder, and fine Ceylon black tea powder, according to a certain proportion. But like my amateur, who is not so demanding, I only cook it in one specification, and the taste is good!

Steps
-
After the water boils, add Ceylon black tea powder. (Bake it for 6 to 10 minutes. It will taste a lot more astringent than you think! If it is not astringent, add a little more black tea powder, and then mix it with evaporated milk. The milk tea made from black tea that is not astringent will not have a strong flavor)
-
Keep stirring, I use a big pot and it won't overflow easily. Those who are prone to overflowing should keep a close eye on it, otherwise it will be very troublesome to clean up later! ! Experience it for yourself!
-
Strain through gauze. After filtering, the gauze will take on the color of the tea. My gauze was white before.
-
Pour into the cup
-
Add a little sugar while it's hot
-
Add black and white evaporated milk, what I want to say here is! The normal ratio is one-third milk to tea and one-third milk to two-thirds tea. I think this ratio is too much milk. If you want the tea to be stronger, add less milk. If you like sweeter and mellower tea, add more sugar and more milk.
-
Stir evenly. Just make the color a little lighter, which is the color of authentic Hong Kong-style milk tea
-
There is a slight color difference, the real thing is a bit darker than this! ! Milk tea should be drunk while it's hot. I haven't tried drinking iced milk tea yet.

This is the Nestlé Sanhua evaporated milk I used this time. I tore off the packaging. I found a picture on the Internet. You can take a look

This is the black and white evaporated milk I have been using before. It tastes similar to Sanhua. If you can buy it, this is my first choice. I can’t tell you why

This is Ceylon black tea powder. One pound bag can be used many times. Compared to black tea bags, it is delicious and more cost-effective!
