Overview

I have cooked dishes using beer as a seasoning before, but I have never paired beer with pig trotters, let alone added five-spice powder to the beer. This time I tried it. While using beer, I also added five-spice powder, and the quality of the dishes improved a lot. Beer braised pig's trotters is a favorite among the family.

  1. Wash the pig's trotters and soak them in cold water for 30 minutes.

  2. Add water and pepper to the pot and bring to a boil.

  3. Blanch the pig's trotters in a pot and drain.

  4. Add oil to the pot, stir-fry ginger and aniseed. Pan-fry the pig's trotters.

  5. Fry the pig's trotters until slightly brown, add five-spice powder and stir-fry.

  6. Add soy sauce and fry.

  7. Add light soy sauce and stir-fry.

  8. Add beer and fry.

  9. Add appropriate amount of hot water, cover the red pepper and simmer. Stir fry from time to time.

  10. After simmering for 1 hour, add salt and stir-fry.

  11. Reduce the juice over high heat until the pig's trotters are almost deboned.
