Old cucumber and meatball soup
Overview
There are too many cucumbers grown in my yard this year. I have to pick a big bag every time. I really can't eat so much, so I just leave some unpicked and pick them for soup when the cucumbers are older. The taste of old cucumber soup is very good, especially the seeds in the flesh, which are a little sweet after being cooked.

Wash the old cucumber, peel it and cut it into thicker slices. Cut the ginger and onion into shreds and set aside.

Pick, wash and chop the chives.

Chop the washed pork, ginger, and scallions into a puree. Add a spoonful of cooking wine, half a spoonful of salt, half a spoonful of pepper, a whole egg, half a spoonful of MSG, and two spoons of water starch and stir vigorously in one direction.

Add lard to a hot pan. When the oil is hot, add peppercorns, shredded ginger and green onions and saute until fragrant.

Then add the old cucumber and stir-fry for a few times, then add a spoonful of salt and stir-fry evenly.

After the old cucumbers are fragrant, add water and bring to a boil over high heat, then simmer over medium heat.

Boil the old cucumber until soft, then turn off the heat, hold the meat filling in your left hand, and gently close your fingers to squeeze the meat filling out of the tiger's mouth. Then use a spoon in your right hand to scrape, and a round ball will come out. Just put each ball into the soup.
