My daughter’s height has grown like crazy this year. She has grown to 166cm in her teens and there is no sign of stopping. The doctor does not recommend taking calcium tablets, so she can only supplement calcium from food. Tahini is rich in calcium. Usually, the little one doesn’t like the black and sticky sesame paste, so I have to find a way to make her eat it. The small sesame cakes freshly baked are soft and delicious. Add soy sauce elbow scallops and stir-fry green vegetables. It is a delicious meal for the little one.

Mix the flour, salt, quick dry yeast, and sugar in the cake base ingredients evenly, add water, and knead into a dough. Place the dough on the chopping board and knead vigorously for 10 minutes (or the bread machine will do it for you) until the dough becomes smooth and elastic (depending on the water absorption of the flour, the water in the formula needs to be added as appropriate until it becomes a soft dough). Cover the kneaded dough with plastic wrap or a damp cloth and let it rest at room temperature for 20 minutes. After the dough has rested, roll it out on a countertop dusted with anti-stick flour into a large thin dough.

Mix pure sesame paste, sesame oil, salt, and Sichuan peppercorns to form a sesame paste filling, so that the sesame paste becomes fluid as shown in the picture. If the sesame paste is dry, you can add more sesame oil to dilute it. Pour the sesame paste filling onto the dough and scrape it evenly with a spatula so that the sesame paste filling is evenly spread on the dough. Roll up the dough from one end. Stretch the dough while rolling to make the dough as thin as possible, and roll it as many times as possible. Roll it up to the end and pinch it tightly at the end. The step of rolling the dough is very important. The more turns you roll, the more layers you will have. Cut the rolled dough into 6 pieces, and pinch the two ends of each cut piece of dough together so that the sesame paste filling is not exposed. After kneading, let it rest for 15 minutes. Place the dough upright on a work surface and flatten with the palm of your hand.

Place the sesame side up on the baking sheet, place in a preheated oven at 180°C, and bake for 18-20 minutes, until the surface turns brown and crispy.
