Cut the pork belly into small pieces, (I don’t eat fatty meat and use pork belly instead) and soak the dried bamboo shoots, (I used homemade dried bamboo shoots that are very tender)

Star anise, cinnamon, garlic cloves, ginger, and dried chili are ready

Add pork belly, old wine, light soy sauce, salt, pepper and ginger and marinate for 10 minutes

Heat oil in a pan until it is five minutes hot, add ginger, garlic, cinnamon and star anise and stir-fry until fragrant

Pour in the pork belly and stir-fry, add dried chili peppers, and stir-fry until the meat turns golden brown

Turn down the heat slightly, add two tablespoons of sugar, and stir-fry until the sugar melts. Add two tablespoons of soy sauce and continue to stir-fry until the meat is coloured. Add some old wine, five-spice powder, a small amount of chicken essence, and heat water (just enough to cover the meat)

Put the dried bamboo shoots into the pressure cooker, pour the meat with soup in the pot, and add two green onions

Press for 10 minutes (because the bamboo shoots are very tender and the meat is very cooked). Taste the taste after opening the pressure cooker. The taste is a bit sweet, similar to the taste of braised pork. If it is not too sweet, you can add some sugar. Add some chopped green onion. This dish is really great!
