Dongzao Glutinous Rice Noodle Fried Cake
Overview
Dongzao is an ingredient with a very high vitamin C content, and glutinous rice noodles are suitable for making sweets. This delicacy is a combination of the two to make fried pancakes. The winter dates are pitted and mashed, mixed into glutinous rice noodles, and an appropriate amount of sugar is added to make the cake. Wash the fresh winter dates and put them on a plate and set aside.

Use a knife or scissors to dig out the core of the winter jujube, leaving only the jujube flesh.

Chop the seedless winter date meat into 1.0cm to 2.5cm pieces. Note: Do not chop the jujube meat too small to ensure that you can see the jujube when eating.

Prepare a non-stick pot or the inner pot of a rice cooker. Pour glutinous rice noodles, sugar, chopped winter date meat and water into the pot, and knead it into a raw date glutinous rice cake. The amount of water added shall not stick to your hands. Note: Use a non-stick pan to knead the dough to prevent the glutinous rice noodles from sticking to the pan.

According to your preference, shape into round cakes of the same size with your hands, then dip the outside of the cake in bread crumbs, press it lightly, and then place it on the board for later use. Note: Try not to expose the chopped winter dates on the outside of the cake, because the winter dates cannot stick to the bread crumbs.

Prepare another iron pan, pour in peanut oil and heat until medium ripe. Place the prepared pancakes into the pan and fry. When frying, turn to slow heat. When one side of the pancakes is golden brown, flip the pancakes over and fry until both sides are golden brown. It is considered done.
