Lotus root is slightly sweet and crisp. It can be eaten raw or cooked, and its medicinal value is quite high. Its roots, leaves, flowers, whiskers and fruits are all valuable and can be used as nourishing medicine. Vinegar lotus root slices are our family’s favorite dish. It’s sour, sweet and especially refreshing!

Prepare the ingredients. I chose long sections of lotus root and peeled off the skin.

Prepare a basin of water, submerge the sliced lotus roots in the water, and add a spoonful of white vinegar to prevent the lotus root slices from turning black. I don’t have white rice vinegar at home, so I used salt instead, and the effect was average.

Boil water, blanch the lotus root slices for two to three minutes, take them out and ice them with cold water. Ready for use!

Let’s start making the sauce. This is my specialty. First add the sesame oil. You can decide how much to add according to your own preference. I always have a good grasp of the proportion.

At this time, the lotus root slices can be taken out and placed in a large bowl. Top with the shredded green onions and minced garlic prepared in advance. Some people like shredded ginger, but it is a bit spicy for infants and young children, so they don't add it.

It got dark after six o'clock, and the light was adjusted, so you can still see it. Needless to say, the taste is sour, sweet, green and fragrant. My baby ate half a plate of it haha.
