Steps
-
Prepare all raw materials and soften the butter at room temperature.
-
Except for butter and color powder, put the other raw materials of the dough into the Petri PE9600WT bread machine in the order of bottom layer of liquid, middle layer of flour, and upper layer of sugar, salt and yeast. Start the custom dough kneading program, select 18 minutes, and knead until a thicker film can be drawn out.
-
Add butter, start the custom dough kneading program, and select 20 minutes.
-
Knead until it reaches the expansion stage and a thin film can be stretched out.
-
Kneaded dough.
-
Divide the dough into 5 90g pieces, and divide the remaining dough into one portion, for a total of 6 portions, and roll them into rounds.
-
Round the large dough and a portion of 90g dough, place it in a basin, and leave it to ferment at about 30°C. After about an hour, ferment until the dough doubles in size. Dip your finger in flour and poke a hole. If it does not shrink or collapse, it means the fermentation is complete.
-
Add pumpkin powder, red yeast rice powder, purple sweet potato powder and matcha powder to the remaining 4 90g portions of dough, and knead them evenly. Roll the four-color dough into a round shape and place it in a basin to ferment at about 30°C.
-
Use a rolling pin to deflate the fermented original-colored dough and roll it into a round shape. Divide 90g of the dough into 3 equal portions. Cover them all with plastic wrap and let them rest for 15 minutes.
-
Roll out the large, loosened original-color dough into a square piece with a width of about 25 cm, and use a raster knife to draw out the pattern.
-
Turn the six-inch cake tin upside down and wrap all surfaces with tin foil.
-
Put the square dough piece on it and remember to pull it a little to get a beautiful pattern. Just cut off the part that exceeds the mold.
-
Roll the remaining 3 small pieces of primary-colored dough into approximately 40cm long strips. You can sprinkle a little flour on the chopping board so it doesn't get too sticky.
-
Braid 3 noodles.
-
Place the processed original-color dough in the oven for the second rise, ferment at 30°C, and add a cup of hot water for the final fermentation until the dough expands 1.5 times, which takes about 30 minutes.
-
At this time, the colored dough has doubled in size. Dip your finger in flour and poke a hole. If it does not shrink or collapse, it means the fermentation is complete.
-
Use a rolling pin to deflate them into a round shape, cover with plastic wrap and let rest for 15 minutes.
-
Put the fermented original-colored dough into the preheated oven, set the upper and lower heat to 160°C, and bake the middle and lower layers for 18 minutes. After taking it out of the oven, unmold it and place it on a baking sheet to cool.
-
Except for the green dough, the other three colors of dough are equally divided into 10 portions and become individual dough balls.
-
Roll the dough into round balls, put them into groups of five, arrange them in a row and use a bamboo skewer to press the marks in the middle.
-
Roll it up from bottom to top and cut it in the middle to get two roses.
-
Do this with the dough.
-
There is another way to make roses. Roll the dough into a round shape and cut into 4 equal parts as shown, remember not to cut in the middle.
-
Put lotus paste filling in the middle and wrap it with a piece of dough.
-
Then wrap the diagonal piece of dough as well.
-
Do the same with the remaining dough to get a filled rose.
-
After rolling out the green dough, use a leaf mold to press out patterns.
-
After all the dough operations are completed, put it into the preheated oven, set the upper and lower heat to 160°C, and bake the middle and lower layers for 15 minutes. After taking it out of the oven, place it on a baking sheet to cool.
-
Finally, fix the handle of the flower basket on the flower basket with toothpicks, and place the roses and leaves on it.
-
It looks quite similar.
