Wash the pork belly and cut into pieces

Put it in a pot and blanch it in water, then take it out, it will take about 3-4 minutes

Prepare onions, ginger, Sichuan peppercorns, pepper segments, etc.

Put oil in the pot, add onion, ginger, chili pepper, Sichuan peppercorns, etc. and stir-fry until fragrant. Add an appropriate amount of rock sugar and stir-fry until it changes color and becomes sticky

Add the blanched pork belly and continue to stir-fry until browned. Add an appropriate amount of oyster sauce and braised soy sauce. The pork belly must be drained. If the pork belly is not drained, oil will splash out (don’t ask me how I know...)

Stir-fry until the surface is slightly yellow, add water to cover the meat, add cinnamon and other spices, add an appropriate amount of cooking wine, and cook over high heat

I prepared two hard-boiled eggs before, which can be cooked together in the pot

After the high heat is almost done, turn to low heat and simmer. Since I don’t have a pressure cooker at home, the process is long, about an hour. If the water dries out, add more water until the pork belly becomes tender. Add salt before taking it out of the pot
