Wash and cut into pieces for later use

Crack the eggs into a bowl (remember to beat them into the bowl and then put them into oil for frying to be effective)

Pour a bowl of oil into the pot and wait until the oil temperature rises to 70℃ to 80℃. Then pour the eggs in the bowl and fry both sides until golden brown

It will be this color after frying

Find something to put the oil used for fried eggs in, leave a little in the pot, turn on low heat, add ginger, garlic, and chili and stir-fry until fragrant, remove and set aside

Put a little oil in a hot pan, pour the tomatoes, add salt and stir-fry until 80% melted, then add the fried ginger, pepper and garlic together, and add a little water (depending on personal preference). Pour in the sugar: soy sauce: oil and cook over low heat for 1 minute

Then add the chopped green onions and turn off the heat

Pour the fried juice into the fried eggs and flip it twice with chopsticks
