Braised Bean Noodles
Overview
I think recipes often just record the production process and some precautions. In fact, the side dishes and ingredients can be added according to personal preferences and the ingredients available at home ~ except for local specialties of course. This bean braised noodles is more classic. I added black bean to stir-fry according to my personal ideas instead of the dark soy sauce and light soy sauce that are usually used for braised noodles... It is very fragrant... If you don't have it, of course you can add seasonings at will. The noodles used for braised noodles should be chosen 🈶️ Strong, wider or thicker noodles that can withstand cooking, otherwise they will rot as soon as they are cooked and taste bad. This noodle is my own pumpkin noodles. It is very fragrant and suitable to be used with these vegetables to make a brightly colored and moderately flavored dish that is both a staple food and a dish... Noodles 😅😅

Prepare the raw materials: wash the beans, break off the fat and lean pork (the pork belly is best~), slice the green onions and garlic into thin slices, prepare them. I also bought some tempeh

In the pot, add oil and stir-fry the pork belly until fragrant, then add green onion and garlic cloves and stir-fry over medium-low heat

Then add a few pieces of tempeh and stir-fry over low heat for a while to bring out the flavor

Add beans, carrots and appropriate amount of salt and stir-fry evenly

Add about a bowl and a half of water and bring to a boil over high heat

After the water boils, turn the bottom of the pot a little to see if there is any paste~ Then shake the noodles a little bit and spread them into the pot over medium-high heat (if the water is too high, just medium-high heat). Cover and simmer for about 5 minutes~

After simmering for 5 minutes, I opened it again to check the situation. Now the water has almost dried up and the noodles are very fragrant (if there is still a lot of water in this step, you need to control the heat according to the softness and hardness of the noodles)

Then turn down the heat and add a little minced garlic and green onions

Use a shovel in one hand and chopsticks in the other to quickly mix well and collect the juice...it's good~turn off the heat!

The finished product is put on a plate and ready to eat

The finished pumpkin noodles have a slightly sweet taste. The fragrance of green beans is mixed with the rich aroma of tempeh. The combination tastes really layered and delicious!
