Soak the meat and bones in fresh water in advance

Boil in water, remove and wash, set aside. Add ginger slices, green onions and three teaspoons of cooking wine

Peel the lotus root and cut into pieces with a diagonal knife

Add 2 liters of water

Bring to a boil over high heat and then simmer over medium to low heat (it will take about an hour and a half)
