Crispy Scallion Thousand Layer Pancake

I have wanted to make mille-feuille pancakes a long time ago. I like how crispy and delicious it is. My mother-in-law used to make it. It tastes very good. After brewing it for a while, I tried to make it myself today. It was not very good, but my son said it tasted pretty good. It is a simple and delicious breakfast with rice porridge

Crack the eggs into a bowl and mix well. Add appropriate amount of salt and pepper and mix evenly. Finally, add flour and mix into cotton wool. If it is too dry, add appropriate amount of cold water and knead it into a smooth dough (the dough should be softer). Knead it well and let it rise for 20 minutes

Wash the green onions and chop them into small pieces. Heat the oil in a pot, then turn down the heat to low, add the chopped green onions and fry for 3-5 minutes. Turn off the heat and pour into a bowl and set aside

Fold the dough into the shape as shown in the picture (I forgot to take pictures of the folding steps)

Finally, roll the folded dough into a pancake and put it in an electric baking pan for 3-5 minutes (because I rolled it thinly, 3 minutes is enough)
