Douzui and rice
Overview
Hezi rice is a special home-cooked meal in Jinzhong, Shanxi. Its basic combination is millet, potatoes, vegetables and various flour foods. The meal is combined into one, so-called blended rice. Millet nourishes the stomach, and grains nourish the body. I learned to make this porridge-like noodle dish, which is both stomach-friendly and easy to digest, and is a good breakfast to keep my stomach warm all day long

Make the dough first. Add an appropriate amount of water to the flour and mix into noodles with moderate hardness. Cover with plastic wrap and let rise for 30 minutes.

Wash and prepare all the ingredients. Soak the peanuts in water and peel them in advance.

Dice sausage, potatoes, carrots, pumpkin, and cut ginger into thin strips.

Heat the pan with cold oil, add a little more shredded ginger and stir-fry until fragrant.

Then add diced potatoes and soybeans and stir-fry. At this time, add cooking wine and light soy sauce.

Add boiling water, cover the pot and turn to high heat. After the water boils, add peanuts and millet and cook.

When cooking millet porridge, roll the dough into a large thin piece, cut into small pieces and put them into the pot. Add the tender pumpkin cubes before adding the dough pieces. (The casserole is a bit small, I’m afraid the water will overflow and transfer to the pot again)
