Cold Cowpeas
Overview
Summer is coming, cowpeas are on the market in large quantities, and the price has become cheaper. In this summer, we can all enjoy this seasonal vegetable in different ways. Today I made a cold cowpea salad, and the beautiful color makes people very happy.

Wash the cowpeas and remove the two stems.

Pour water into the wok and blanch the cowpeas until cooked.

Cut the carrots and ham into round slices. In order to keep the shape consistent, you can use a mold. Mince the garlic and dice the bell pepper.

Cut the blanched cowpeas into cubes and put them into a large bowl.

Add carrot slices, ham slices and minced garlic together, start seasoning, add light soy sauce, salt, a little sugar, and more sesame oil.
