Cute caterpillar bean paste buns
Overview
As soon as the caterpillar bread was ready, I posted a picture to my friends circle, and my friends all said they were scared. Don’t you think it’s a little cute? In fact, I wanted to make this bread on Children’s Day, which coincides with the solar term, because I was delayed for something. The bread is made using the direct method, and because yogurt is added to the ingredients, it has a very soft texture, and it is still OK even if it is left overnight.

Mix all the ingredients except butter, start the bread machine and knead the dough, first at low speed for two minutes, then turn to high speed. After 30 minutes, add softened solid butter and continue kneading until the dough can pull out a transparent film and reach the fully expanded stage, about ten minutes.

Turn off the bread machine and let the dough ferment at room temperature. Let it rise until doubled in size. Dip your fingers in flour and poke holes in the dough without shrinking or collapsing.

Dust your hands with some flour, take out the fermented dough, pat it gently with your hands to deflate the dough, divide it into 8 equal parts, roll it into a ball and let it rest for 15 minutes.

Roll the rested dough into an oval shape.

Turn over and spread a layer of bean paste filling on the thin dough sheet, leaving 2-3CM unsmeared on the edge.

Roll up from top to bottom until there is no bean paste filling.

Cut the unrolled part into small strips with a knife, roll the small strips on the long dough to form a caterpillar shape, and place them all on the baking sheet.

Put a bowl of hot water in the fermentation box, set the fermentation temperature to about 38 degrees, and carry out the final fermentation until it is fermented to 2.5 times the size.

After fermentation is completed, brush the surface with egg wash and garnish one end of the dough with black sesame seeds to make caterpillar eyes.

Place in the middle rack of the preheated oven and bake at 175 degrees for 20 minutes.

After the bread is baked, move it to the grill to cool, then seal it in a bag and store it at room temperature.
