Cut the pork belly into cubes and marinate with salt, ginger, sugar, chicken essence, soy sauce, cooking wine, and pepper for an hour.

Heat oil in a pot, add pork belly and stir-fry until both sides are slightly brown and lard flows out. Pour in water until the pork is submerged. Add ginger slices, longan, cooking wine, cinnamon, soy sauce and star anise and bring to a boil.

When the water is almost dry, add rock sugar, an appropriate amount of salt, chicken essence to taste and wait until the syrup hangs on each piece of meat.

Transfer to a plate and garnish with a small amount of white sesame seeds.
