Stir-fried shrimps with green onions (mantis shrimps)
Overview
I am a mother with a very cute 2-year-old daughter. In order to improve the quality of life and make my daughter fall in love with my mother's cooking in the future, I began to use my own talents and preferences to learn how to make various delicacies, photograph delicacies, and publish recipes. In addition to learning by myself, I also hope to help other mothers like me.

Ingredients
Steps
-
Ingredients preparation: 500g Pipi shrimp, 200g spring onions, 200g ginger, 2 tablespoons rice wine (or 100ml beer to enhance the aroma and remove the smell) 4 cloves garlic, 1 tablespoon salt, a little soy sauce, 2 tablespoons oil
-
First boil water, add a small amount of chopped ginger, blanch the shrimps in water, cook for 3 minutes, remove and drain. (Pipi shrimps that have not been blanched cannot be stir-fried and are not easy to taste),
-
Wash the pot and wipe off the water, then light the fire and prepare to stir-fry the onions and garlic. (While the water is boiling, prepare the ingredients that need to be stir-fried. Cut the shallots into strips of about four centimeters and mince the garlic.),
-
After confirming that there is no water in the pot, pour cooking oil. When the oil heats up, pour in the prepared onions and garlic, stir-fry over high heat until fragrant,
-
Then add the drained shrimps and stir-fry together,
-
After the water is dry, add salt and soy sauce and stir-fry. Before putting it in the pot, add 2 tablespoons of rice wine or a little beer and continue to stir-fry. When the rice wine evaporates and the pot is shiny, continue to stir-fry for a few times. Then add oyster sauce to enhance the color (oyster sauce can not only enhance freshness, but also make the ingredients golden and shiny and look appetizing). Stir-fry for a few times and then remove from the pot and place on a plate.
