【Henan】Spinach soft pie
Overview
I recently purchased several new baking pans, and I have been busy making various snacks for the past two days. It’s Chinese New Year. Whether you eat it yourself or give it to others, homemade snacks are more popular than bought ones. The little soft pie I made today is made by adding spinach powder to the flour. The spinach powder is made by myself, which makes it safer to eat, and the snack is also much healthier. When I gave it to my baby, I didn’t even give him a sandwich. I gave it to him as a small cake. My two eldest children like the stuffed ones because they have a richer flavor and better texture. However, the stuffed ones have a lot of sugar in them, so I only eat them with each little one. When these small snacks are squeezed onto the baking sheet, it is best to have the same size, so that they look better after being sandwiched. The macaron baking sheet I used is stamped and the size is easy to control. After the finished product was filled, I originally planned to wrap it with a layer of chocolate, but I was worried that the calories would be too high, so it was left. It would look better if covered in chocolate.

Ingredients
Steps
-
Mix spinach powder and cake flour
-
Sieve it twice to mix it evenly and create more air for later mixing
-
Put the egg whites into a basin that is oil-free and water-free, and add 5 drops of lemon juice
-
Stir until big bubbles form and add 1/3 of the rock sugar powder. You can also use white sugar
-
If the foam is slightly fine, add 1/3 of the rock sugar powder
-
When it becomes more delicate, add all the remaining rock sugar powder
-
Whip at high speed until wet foam, then turn to low speed and continue whipping until dry foam, that is, the whisk will have a straight tip in advance
-
Add 5 grams of rock sugar powder to the egg yolk
-
Stir evenly and let the powdered sugar melt
-
First take about 1/3 of the egg white and egg yolk and mix evenly
-
Pour in the remaining egg whites
-
Mix well
-
Sift in the sifted flour
-
Mix evenly by stirring
-
Put it into a piping bag and pipe it onto the baking sheet, trying to make it as uniform a size as possible. Shake the baking pan to release air bubbles. I forgot to shake it, some cracked a little after baking
-
After preheating the oven to 150 degrees, bake in the oven for 13-15 minutes
-
The baked cake has a pie-like base, and it comes out of the mold very easily after cooling.
-
You can directly use pasty marshmallow filling, I used caramel flavor
-
I also made a sauce using blueberry jam and chocolate which can also be used as a filling. Anyway, just put whatever core you like
-
After filling, you can enjoy it. The ones that are cut are filled with chocolate jam, and the ones that are not cut are filled with marshmallows. It would taste better if covered with a layer of chocolate sauce, but the calories would be higher. I'll spare it
