Ingredients: mutton, carrots, astragalus, and angelica.

Put the mutton into the pot, add water, add seasonings, bay leaves and ginger.

Add cooking wine, bring to a boil over high heat and remove the blood foam. Continue cooking for half an hour more.

Remove the cooked mutton and set aside

Pour oil into the pot, add carrots and stir-fry.

Add the mutton and stir-fry for a minute, then pour in the mutton soup

Add soy sauce, salt, and sugar.

Add miso.

Add astragalus and angelica

Stir fry.

Add hot water, cover the mutton, and simmer for an hour until the meat is tender, then turn off the heat and serve.
