Prepare ingredients. Mix the scallop meat with white pepper, Shaoxing rice wine and cornstarch, then marinate slightly for flavour. Sweet corn kernels are controlled dry.

Peel the yam and cut into 1cm square dices, peel the carrots and cut into slightly smaller dices.

Blanch the peas until cooked, remove and cool and set aside.

Heat a wok over high heat, add oil and heat until it is 30% hot, then reduce the heat to low, slide the scallop meat into the pan and fry until it changes color and serve.

Leave the bottom oil in the wok, heat it up to 50% heat, add the diced carrots and stir-fry for a while, then add the sweet corn kernels, peas, diced yam and scallop meat and stir-fry quickly. Add salt before removing from the pan.
