Mix the flour and water evenly into a dough and let it rest for about 25 minutes. Knead once to make the dough smooth

Chop the pork into a container, add vegetable oil, salt, chicken essence, sesame oil, cooking wine, white pepper, very fresh soy sauce, green onions and minced ginger, stir well and marinate until the flavor is infused.

Wash and cut the square melon, remove the pulp and seeds, grate into shreds with a vegetable grater, add a little salt, stir evenly and marinate to remove the water
