Except for butter, put the other raw materials of the main dough into the bread in the order of liquid in the bottom layer, flour in the middle layer, sugar, salt and yeast in the upper layer. Start a kneading program and knead until a thicker film can be drawn out, then add butter.

Start the dough kneading process again for 15 minutes. After kneading to the expansion stage, a thinner film can be stretched out.

Turn on the fermentation program of the bread machine and let it ferment for an hour until the dough doubles in size. Dip your finger in flour and poke a hole. If it does not shrink or collapse, it means the fermentation is complete.

Deflate the fermented dough with a rolling pin, divide it into 16 equal portions, roll into balls, cover with plastic wrap and rest for 15 minutes.

Flatten the rested dough and roll it into a round shape again, then place it one by one into the baking pan.

The shaped dough is placed in the oven for the second rise and fermented at 36°C. It takes about 30 minutes to ferment until it doubles in size.

While the dough is fermenting we will make the okpi dough. Combine all the ingredients for Okpi.

Just knead it into a smooth dough.

Then divide out 16 small 3g portions to make the eyes of the frog, roll them into round shapes and set aside. Use a rolling pin to roll out the remaining okpi dough.

Find a circle of suitable size and cut out several circular dough pieces.

Take out the fermenting dough, dip a little water behind the frog's eyes, and place the small dough in the corresponding position. (Remember to put it in the middle. I must have done too much. I habitually put the small doses on both sides.)

Brush water lightly on the surface of the dough, attach a round dough piece to make the bear's face.

Put the prepared dough into the preheated oven, set the upper and lower heat to 170°C, middle layer, and bake for 25 minutes.
