Wash the shrimps, remove heads, shells and devein, chop half into puree and set aside half.

Put the whole shrimp into a bowl, add cooking wine, ginger slices, green onions, and marinate for 10 minutes.

Put the shrimp paste, minced meat, minced green onions, salt, MSG, and sugar into a bowl and stir evenly to form the filling.

Add the flour, cornstarch, and salt to a large bowl, pour in boiling water, stir evenly, scald the noodles until cooked, cover and simmer for about 5 minutes.

Add lard and knead into a uniform dough.

Knead the dough into strips and cut into 12 even portions.

Knead the ingredients into dough, roll it out into a dough as thin as possible, add an appropriate amount of meat filling and whole shrimp, and shape it into shrimp dumplings.

Put in the steamer, bring the water to a boil, and steam over high heat for 10 minutes.
