Materials: yam, soft sugar, auxiliary materials: cornstarch, vegetable oil.

Peel the yam and cut into cubes. (It is best to wear disposable gloves to prevent mucus from irritating the skin).

Soak the yam cubes in clean water and drain.

Spread a little cornstarch on it.

Put the pot on the fire, add an appropriate amount of oil and heat it until it is 70% hot, then add the yam cubes one by one.

Fry until crispy and hard, remove and drain the oil. (If you like noodles, you can fry them again until golden brown and take them out).

Apply a little oil to the pan to prevent sticking.

In another pot, add vegetable oil and sugar, the ratio is 1:3.

As the sugar dissolves, continue stirring.

Wait until the syrup becomes thin and light yellow in color. (Be sure not to set the temperature too high, otherwise the sugar will become bitter and turn into caramel)

Quickly add fried yam cubes.
