If the batter is too thin, the eggplant box will not be coated with batter, and if it is too thick, the eggplant box will be coated and the batter will not taste good. Mix the batter and set aside.

  6. Fold all the eggplants into the meat filling in turn. Don't put too much meat filling, and don't put too little meat filling. If you put too much meat, it will be undercooked, and if you put too little, it won't taste good. Put the meat stuffing in the middle and flatten the eggplant with your hands. It's ok if there is meat stuffing on the edge but no meat stuffing comes out. You can also put more meat filling, flatten it with your hands, and scrape off the excess meat filling with a spoon.
