Prepare materials

Wash the eggplant, cut into pieces with a razor blade, and mince the onion and ginger

Add minced onion, ginger, light and dark soy sauce, salt and a little oil into the meat filling and mix into the meat filling

Take a basin, put flour in it, add an appropriate amount of water and mix it into a batter. The batter should be in a state where you can hang a flag when you lift it with chopsticks. If the batter is too thin, the eggplant box will not be coated with batter, and if it is too thick, the eggplant box will be coated and the batter will not taste good. Mix the batter and set aside.

Take a piece of eggplant, put an appropriate amount of meat filling in the middle and flatten it

Fold all the eggplants into the meat filling in turn. Don't put too much meat filling, and don't put too little meat filling. If you put too much meat, it will be undercooked, and if you put too little, it won't taste good. Put the meat stuffing in the middle and flatten the eggplant with your hands. It's ok if there is meat stuffing on the edge but no meat stuffing comes out. You can also put more meat filling, flatten it with your hands, and scrape off the excess meat filling with a spoon.

Rinse the pot and pour in an appropriate amount of oil. There must be plenty of oil.

Heat the oil until it smokes slightly. Put the eggplant into the batter and coat it in the batter

Turn the heat to medium-low, put the eggplants wrapped in batter into the pot one by one, and put in an appropriate amount of eggplants according to the size of the pot at a time. Don't put too much, less but not too much to avoid sticking together

Fry until both sides are slightly brown, take it out and fry in the next pot
