Our crispy duck
Overview
Our crispy duck has delicious meat, bright red color, crispy skin and crispy meat. I cook this dish using the most traditional cooking method here. The marinating seasoning also uses soy sauce, salt, green onion, ginger and star anise, which maintains the original flavor of the duck itself. First marinate, then steam, and finally drizzle with hot oil until the skin becomes crispy.

Prepare all the seasonings

Wash the duck, drain the water and put it into a basin. First add Huadiao wine and rub it all over the duck. Then massage the salt evenly. Finally add light soy sauce, dark soy sauce, half of the green onion, ginger and star anise. Cover it with plastic wrap and marinate for more than 12 hours

Add water to the steamer and add the onion and ginger first

Then take out the marinated duck and steam it over high heat for an hour

Then brush with braised soy sauce

Pour oil into the pot

Heat the oil to 7 minutes and fry the duck for 3 minutes

Finally, use a hook to hook the neck of the duck and lift it up. When the oil is very hot, keep pouring oil on the duck repeatedly

Keep pouring until the skin becomes wrinkled
