Braised Yi Noodles with Ginger and Scallion Lobster

It’s the end of the year again, and various festivals are coming one after another. It’s time to prepare some heavyweight dishes to entertain family and friends. Everyone loves to eat seafood, and we can cook it quickly and easily. Just stir-fry it with ginger and scallion, and it will be very delicious. If you are tired of eating ginger and scallion, you can also stir-fry it with typhoon shelter (spicy), stir-fry it with XO sauce, or stir-fry it with black pepper. Australian lobster is rich in nutrients, the meat is tender, smooth and crispy, and tastes delicious and sweet. The most important thing is that it lives in the South Pacific, the water is clean and pollution-free, and it is quite safe to eat. I chose the lobster tail. Personally, I think the meat at the end of the shrimp head is tenderer. More importantly, the shrimp tail is easy to handle. Just wash it and cut it into pieces. There are no intestines.

Prepare all materials. I used Australian lobsters. The lobster tails are easy to clean and handle!

Cut lobster into cubes, slice ginger, green onions, garlic cloves and set aside

Boil water and simmer for three minutes. It is originally cooked fresh Yi noodles, so it does not need to be cooked for too long

Pour away the water, add oil and green onions to the pot, and stir-fry. It’s best to squeeze some scallion oil in advance to make it taste more fragrant! For this step of frying noodles, you need to use a non-stick pan

Add salt to taste. The scallion oil noodle base is ready. Cover and set aside.

In a large wok, add ginger slices, green onions and garlic cloves and stir-fry

Add the lobster and stir-fry for 1 minute

Add cooking wine

Add appropriate amount of water and cover with lid

Open the lid after half a minute and stir in the oyster sauce and cornstarch

Add salt to taste. When the moisture reaches this level, sprinkle some green onions, stir-fry twice and turn off the heat.

Place the fried scallion noodles on a plate

Pour lobster and sauce
