Overview

The noodles I use are slightly thicker than those specially used for braised noodles. Personally, I like noodles that are slightly thicker and chewier. Thick noodles take longer and thin noodles take less time. When the braised noodles I made were slightly cooler, they didn't stick together one by one. All the seasonings are made according to your own taste to make it delicious

  1. Prepare the ingredients, cut the potatoes into strips, cut the beans into medium sections, cut the meat into cubes, cut the tomatoes into cubes, and prepare some ginger slices and green onions

  2. When buying fresh noodles, shake the flour off the noodles on the chopping board to prevent them from sticking to the pot

  3. Heat the pan with cold oil, add the meat and stir-fry until it changes color. Add the onions and ginger and stir-fry until fragrant

  4. Add potatoes and beans and stir-fry

  5. Add salt, dark soy sauce, oyster sauce, thirteen spices and stir-fry evenly. Add tomatoes and continue to stir-fry for one minute

  6. Add hot water to the level of the vegetables, cover and simmer over high heat for 2-3 minutes

  7. Change the heat to low and add the noodles (it must be a low heat to prevent the pot from sticking)

  8. After 3-5 minutes, turn the noodles over, spread them gently with chopsticks, and simmer with the lid on until the soup becomes less (Friends who are not sure about the time and amount of water during this period can check the situation in the pot from time to time)

  9. When the time is up, stop the fire and mix the noodles and vegetables. It’s a delicious dish
