Five Color Madeleines
Overview
Madeleine cake is a French-style small dessert, also called shell cake. Its origin is really made of shells. It has a light lemon fragrance. Now of course we have a professional mold to make this madeleine. The colors are adjusted with baked bamboo charcoal powder, red yeast rice powder, matcha powder, and cocoa powder to make the madeleine more colorful.

Prepare the materials (my eggs are relatively small, so I used 3 eggs. For larger eggs, you can use 2 eggs)

Add eggs, milk, sugar and lemon juice and put them into a container

Mix well and let stand for 10 minutes to allow the lemon flavor to blend into the egg liquid

Mix baking powder and cake flour evenly and sift into the egg mixture

Mix into a uniform batter, microwave the butter for about 1 minute to melt it, add the melted butter to the batter, and stir with the batter until it is light and uniform

Divide the batter into 5 parts, put 4 parts into a small bowl, add various powders for coloring, and stir evenly

Put the colored batter into the madeleine molds respectively, and pour a portion of the original batter into the molds. Drop the molds on the table a few times to shake out big bubbles. Preheat the oven to 190 degrees and leave the middle rack for 20-25 minutes

After testing the madeleine cake, take it out and let it cool
