Blueberry jam shortbread
Overview
As a snack for children on weekends, the filling is blueberry jam. Blueberry jam is a domestic brand of additive-free blueberry jam. It is made from pesticide-free and ripening agent-free blueberries. The elderly and children can eat it with confidence. Sweet and sour, it is good for stomach and digestion, easy to digest and absorb, and can also stimulate appetite.

Steps
-
Prepare 150g of medium-gluten flour and 100g of low-gluten flour, sift them into two containers respectively.
-
Add 50g of salad oil, 30g of powdered sugar to 150g of medium-gluten flour, add 70g of warm water and knead into a dough. Add 50g of salad oil to 100g of low-gluten flour and knead into a pastry. Cover with plastic wrap and keep aside. I didn’t use butter this time, because the weather is cold in winter, and butter will solidify quickly, making the dough hard and difficult to use, so I used salad oil instead. The color of the baked dough is not as beautiful as butter, and it doesn’t have the fragrance of butter, but the taste is almost the same.
-
Take out the dough and divide the dough and puff pastry evenly into 7 pieces. Each piece of dough is about 43g, and each piece of puff pastry is about 21g. Take a piece of oil dough, press it a little thin, wrap it with a piece of pastry, seal it, and flatten it. Wrap all the dough in puff pastry in the same way.
-
Take a piece of dough and roll it into a cake from the middle to both sides, and roll it up from top to bottom. Because salad oil is used, the dough is very soft and easy to use, so there is no need to bake it. Then directly turn the rolled dough roll over, roll it out from the middle to both ends, then roll it up from top to bottom, and so on, until all the dough is rolled. Once everything is done, cover with plastic wrap and leave for 10 minutes.
-
Take a piece of dough, use chopsticks to press the middle of the dough, then flatten it, roll it into a round ball and wrap it with blueberry jam. Don’t put too much jam, as the jam is a little thin and easy to leak.
-
After everything is wrapped, place it on the baking sheet.
-
Preheat the oven to 190 degrees and bake on the middle rack for 10 minutes. Take it out and garnish it with blueberry jam. This step can be omitted because it doesn’t look very good after it’s baked and you can’t change it. Bake again in the oven for 15 minutes. Bake for 25 minutes in total.
-
When it comes out of the oven and is put on a plate, it breaks into pieces when you touch it, and the crumbs fall out when you take a bite. It is so delicious, and the children especially like it.
