Selected Tofu
Overview
Choko Tofu is a local dessert in my family. When I was a kid, every family would make some tofu in summer to relieve the heat. The process of picking seeds from the mountains in autumn, drying them, and filtering them into powder is also very complicated. Nowadays, the conditions are not as good as before. No one will go to the mountains to pick Seiko anymore, and there are not so many Seiko powders. However, my family still has the custom of eating Seiko tofu in summer. You can buy it at the market, but it cannot be all made from Seiko powder and other flours will be added. So I will go to my friends in the mountains to buy some home-made real sage powder and make my own sedge tofu.

Take 250 grams of semen powder.

Take a large basin and put the seed powder into a filter bag.

While adding water, rub the bag with your hands until the bag is completely filtered.

Leave the filtered liquid for clarification.

After clarification, gently pour away the yellow water on top.

Fill an oil-free soup pot half full with water and bring to a boil over high heat.

Put some water in the middle of the slurry to make it a liquid.

After the water boils, pour in the liquid and stir quickly to form a paste. Turn on medium heat and stir constantly to avoid burning the pot.

Cook until yellow and transparent, then pour out and let cool.

After it cools down, cut it into small pieces, add sugar, vinegar, and some ice water, and you can have a bowl of cool and refreshing Tofu.
