What I bought was fresh small yellow croaker. I scraped off the scales and cleaned the guts. Heat the oil in the pan until it is about 70% hot. Reduce the heat to low. Put the yellow croaker into the pan. Do not turn it over yet. Shake the pan until the fish can move. Fry until golden brown, then flip over and fry until golden brown.

Cut the scallions into sections and fry until both sides turn golden brown. Add the scallions and sauté for a while.

Pour in hot water. I usually use hot water for stews, so that the vegetables cook faster. Add salt, cooking wine, light soy sauce, oil, steamed fish soy sauce and other seasonings. Cover the pot and simmer over low heat, stirring in the middle.

Stir properly in the middle and simmer until the soup turns milky white.

Cut the tofu into 1 cm thick, 2 cm long and wide tofu cubes. Soak in salt water for a while to prevent the tofu from breaking into pieces. Add the soaked tofu, cover the pot, and continue to simmer for 30 minutes. Don't forget to stir slowly with a shovel in the middle.

Cut off the coriander, add it to the stewed tofu, turn off the heat and take it out of the pot.
