Matcha Honey Bean Toast
Overview
This recipe is to use up the excess protein at home. To make cranberry shortcake, I only used egg yolks, and I kneaded the egg whites into the toast. The dough with protein added is not as sticky as usual. Fortunately, with the help of the Petri PE9600WT bread machine, otherwise kneading it by hand would definitely be more torture.

Prepare ingredients.

In the bread machine barrel, first put water, egg whites, then flour, sugar, salt, and yeast

Enable the dough mixing program of the Petri PE9600WT bread machine, start kneading the dough, and adjust one program to 30 minutes

At the end of the process add the diced butter.

Start the iMiX program for another 20 minutes.

Observe the dough and stop the process if you can pull out a large piece of unbroken film. (I was holding the camera in one hand and pulling out the sticky dough with the other, so it was a bit difficult)

Divide dough into two equal parts.

Add 5 grams of matcha powder to one portion and press lightly.

Put the dough into the bread machine and use the iMiX program to knead it for 3-5 minutes until the dough is even.

Separate the two colored doughs with plastic wrap and place them in the bread machine to ferment.

Let the dough rise until doubled in size. (I was in a hurry to go out, so I almost missed the first shot

Deflate the white dough and roll it into a long strip as wide as the bread machine.

Roll out the matcha dough to the same size, and put the two colors of dough together, with the white dough at the bottom and the matcha dough at the top.

Spread the honey red beans in an even layer, leaving space around them.

Roll up one end of the dough from bottom to top.

Take out the mixing blade of the bread machine, put the rolled dough into the bread machine, and start the second rise. We can use the fermentation function of the bread machine. (Because I am not sure when I can go home, I use natural fermentation. The room temperature at my house is 18 degrees)

Ferment until 80% full.

Select program 26 baking mode, timer 40 minutes

After baking, take it out of the oven and let it cool.
