Cold cake
Overview
Cold cake is a special food in Yibin, Sichuan. It is cool, fresh and refreshing, and has the effects of clearing away heat, strengthening the stomach and nourishing the skin. The cold cake is made from rice and uses gypsum as the coagulant. In the past, I only saw it being sold on the street, but I never knew how to make it. Unexpectedly, cold cake noodles are now sold. Pre-processed powder is easy to prepare. It tastes just like the ones sold on the street, with a light alkaline taste.

Pour 100 grams of warm water into the cold cake powder,

Stir evenly to form a paste and let it sit for 20-30 minutes

Boil 550 grams of water

Pour half of the boiling water into the cold cake paste,

Mix well

Pour back into the pot and stir evenly

Bring to a boil over high heat, stirring continuously for about 5 minutes, until the rice milk becomes translucent, remove from the heat

Pour separately into deep plates

After cooling, the rice milk solidifies

Cut a knife in the middle

Put half of it bottom up in another empty plate

Pour in brown sugar syrup
