Rinse the eel, cut it into sections, and soak it in water to remove the blood and earthy smell. Remove and drain.

Put shredded eel, light soy sauce, dark soy sauce, salt, sugar, white pepper, vinegar, rice wine, and shredded ginger together and pinch evenly, set aside.

When marinating the shredded eel, cut the wild rice shreds and mince the garlic (if you don’t like garlic, you can pat the garlic without mincing it, and then take out the garlic after frying)

Prepare the gravy made with white pepper, vinegar, light soy sauce, dark soy sauce, sugar, water, and cornstarch and set aside.

Heat the oil pan, add lard and sesame oil, add ginger slices, and sauté garlic until fragrant

Add shredded eel and stir-fry.

Turn the heat to medium, add the wild rice, stir-fry until the wild rice becomes soft, then turn the heat to low and stir-fry for another half minute.

Add the gravy and serve on a plate.
