Pork belly and fried tofu
Overview
The pork belly braised tofu puffs are braised in red and red color. The tofu puffs absorb the fragrance of the pork belly and shiitake mushrooms, and also have a little bit of soup. When mixed with white rice, it is called a rice killer and goes well with rice~~

Ingredients: 150 grams of soaked tofu, 60 grams of pork belly, 10 mushrooms (soaked in advance), 5 peppers. Seasoning: 1 teaspoon of Pixian red bean paste, 1 teaspoon of light soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of minced garlic, 1 teaspoon of minced green onion, 1/3 teaspoon of minced ginger, 1 teaspoon of cooking wine, and 1/3 teaspoon of sugar.

Process the ingredients: Cut the tofu puffs in half from the middle. Cut the tofu puffs for easier flavoring. Cut the pork belly into thin slices and cut the pepper into sections diagonally (those who like spicy food can add two millet peppers).

Heat the cold oil in the pan, add the sliced pork belly and stir-fry until the oil spits out. Add the minced onion, ginger, garlic, and Pixian bean paste and stir-fry over low heat to produce red oil.

After frying the red oil, add a teaspoon of cooking wine along the edge of the pot to remove the fishy smell.

Add 1 teaspoon dark soy sauce and stir-fry evenly to color the pork belly.

Add soaked mushrooms and stir-fry until fragrant, soaked chopped tofu, light soy sauce, and a little sugar. There is salt in Pixian Doubanjiang, so when using Doubanjiang in cooking, you should add less or no salt as appropriate.

Add about half a bowl of water to be equal to the ingredients, bring to a boil over high heat and then simmer over low heat for a few minutes. During the cooking process, you can use a spatula to press the fried tofu to fully absorb the soup. The fried tofu will become juicy when eaten~

Cook until the soup is reduced and the tofu is soaked in soft and flavourful soup. Add the sliced green peppers and stir-fry quickly over high heat.

Fry until the green peppers are slightly broken and thicken with water starch.

Stir-fry until the sauce is thick and almost coated with the ingredients, then turn off the heat and serve.
