Soak the fungus before rising, peel and wash the yam and cut into diamond-shaped slices, remove the roots and shreds of the snow pea and wash it.

Wash the ginger and green and red peppers and cut them into shreds, cut the garlic into slices and cut the shallots.

Boil water in a pot. After the water boils, blanch the yams for 30 seconds, drain them under cold water and set aside.

Boil water, add salt and two drops of oil, blanch snow peas for one minute, drain in cold water and set aside.

Blanch the fungus for two minutes, drain in cold water and drain.

Heat oil in a pan, add onions, ginger, garlic and green and red peppers and stir-fry until fragrant.

Add a spoonful of light soy sauce and stir-fry evenly.

Add the yam and stir-fry twice.

Then put the yam slices and fungus in, add two drops of vinegar and stir-fry evenly.

Add salt and chicken essence and stir-fry twice.

Turn off the heat and serve.
