Fried chicken fungus
Overview
There are many edible fungi in Yunnan, with many varieties and delicious flavors. The prices range from high to low, so you can choose at will. When I visited Yunnan, I tasted several kinds, and the delicious taste from nature is unforgettable. Recently, the big supermarket here sold fresh gallinopsis mushrooms from Yunnan. When I saw them, I immediately bought two boxes. I felt that the convenient transportation now allows us to eat Yunnan mushrooms even if we don't have to go to Yunnan. There were two boxes of chicken fir fungi, one of which I soaked in oil, so that the delicious flavor could be preserved and savored slowly. I used the other box to stir-fry a side dish with shredded pork, and it was also delicious. The seasoning for stir-fried chicken fungus is very simple. In fact, I just use ginger and salt. I just add Youyi Xian soy sauce and rice wine to season the meat when marinating it to maintain the original flavor of the ingredients so that you can taste the natural and delicious taste of the ingredients.

Ingredients
Steps
-
Wash the freshly purchased chicken fir fungus with clean water
-
Blanch in boiling water for 1 minute and remove
-
The coriander mushrooms I bought were relatively small, and they didn’t have open umbrellas. In order to make it easier to absorb the flavor, I cut the blanched coriander mushrooms in half lengthwise by hand
-
Cut green and red peppers and ginger into shreds
-
Shred the lean pork, add salt, rice wine, and Youyi fresh soy sauce and mix well
-
After mixing evenly, add dry starch and continue mixing evenly
-
Finally, add a little oil and mix evenly. After adding the oil, it will not stick to the pan when frying, and the shredded meat will not stick to each other
-
After the pot is hot, add appropriate amount of oil and sauté the minced ginger until fragrant
-
Add in the shredded pork and stir-fry until it changes color
-
Pour in the gallinobacteria
-
Stir fry for about half a minute
-
Add green and red pepper shreds
-
Add salt
-
Stir-fry slightly until the green and red peppers are broken and ready to serve
