Stir-fried peas and mixed vegetables
Overview
I rarely see this kind of peas after coming to the north. I bought two kilograms of them today. After peeling them, I made a small stir-fry. In the past, peas, potatoes and diced carrots were fried together. There were no carrots at home today, so I put onions and mushrooms, and the taste was even better. The fragrance of peas, the softness of mushrooms, the glutinousness of potatoes, and the sweetness of onions are mixed together, plus a little spiciness, and you will feel happy and full after one spoonful.

Wash all vegetables, drain peas, and dice potatoes, onions, and mushrooms.

Dice the pork, chop the onion and ginger, and cut the pepper into rings.

Add a little oil in the pot, add the diced fat pork and stir-fry until the oil is released, then add the diced lean meat and stir-fry until the pork changes color, then add the green onion, ginger and pepper.

After frying until fragrant, add diced potatoes, stir-fry until translucent, add a bowl of water, cover the pot and simmer.

When the water is half full, add the peas and onions and stir-fry.

Finally add the diced mushrooms and stir-fry. (If the water is dry, add another half bowl of water and simmer for a while.)
