Overview
My son never likes to eat preserved eggs at home. I remember one year when I came home during vacation, I told me that the school’s preserved egg and lean meat porridge was delicious. I silently remembered my son’s new taste and preferences, and I was secretly happy for him. My son had completely adapted to life in Shanghai. So, after that, every time my son comes home, I will make preserved egg and lean meat porridge! After my son finished eating, he said, "Mom, you put too much preserved egg in the preserved egg!" Son, as long as you like to eat it, of course you have to make enough at home! Son, Mom is making preserved egg and lean meat porridge again today. When will you come back? Mom misses you!

Ingredients
Steps
-
Wash the rice, mix well with oil, salt and a little water, and marinate for half an hour.
-
Shred the tenderloin. The same goes for mincing.
-
Add salt, pepper, cooking wine and starch and marinate for 10 minutes.
-
Chop the preserved eggs into small dices, mince the green onions, and shred the ginger.
-
After the water in the pot boils, add the shredded pork and blanch it. When the shredded meat turns white, take it out and wash it to remove the foam.
-
Add 1500 ml of water to the pot and bring to a boil. The amount of water required to cook rice alone is about 800 ml to 1000 ml. Because a lot of ingredients are added, the amount of water is also doubled.
-
Add rice.
-
Stir with a spoon over high heat and simmer slowly for a few minutes. Add a diced preserved egg and shredded ginger, turn to low heat and cook for 10 minutes.
-
Then turn off the heat, cover the pot, and simmer slowly for 20 minutes.
-
Open the pot lid and see that the rice grains are soft and rotten.
-
Turn on the heat, pour in the remaining preserved egg cubes and shredded pork, and cook for another 10 minutes.
-
Add salt, chicken essence, pepper and sesame oil to taste.
-
Sprinkle with chopped green onion and remove from pan.
-
Serve in a bowl. Preserved egg and lean meat porridge, the more you eat it, the better it tastes!
